Got this inspiration from Veggie Primer with just a couple changes.
Ingredients
3 cups low sodium vegetable broth
4 small/medium sweet potatoes, peeled and chopped
1/2 onion, chopped
3 stalks of celery, chopped
3 cloves of garlic, minced
4 oz heavy whipping cream
Instructions
Add broth, sweet potatoes, onion, celery, and garlic to the slow cooker. Cook on low for 8 hours (or high for 5 hours). Then add the heavy whipping cream and blend it up.
Additional topping ideas: chopped almonds, pumpkin seeds, cinnamon, crème fraîche, marshmallows, butter.
