Pollo Asado, Arroz y Ensalada

pollo asadoThis is a recipe from my stepmother’s aunt – healthy Cuban meal!

Most important part – successfully marinating and injecting the chicken [thigh + drumstick] with:
– salt/pepper
– minced garlic
– oregano
– sliced onion
– lemon juice

Bake it at 375 for an hour, and then you leave it to broil for just a little bit. This leaves the chicken crispy on the outside and juicy on the inside. I paired it with 3/4 cup of rice and salad (2 tbsp of 40 calorie dressing, romaine lettuce, tomato).
